African Peanut Stew with Chicken and Sweet Potatoes

I’m always a big fan of quick and easy dinners, but this week I REALLY need them. Because daylight savings is totally sucking the life out of me. I feel like I can’t even function anymore once it’s dark outside. I just want to get in my pajamas and drink wine. It’s hard to muster up enough energy to cook dinner when it’s pitch black before 5pm. Ugh. I hate it!

So this African Peanut Stew with Chicken and Sweet Potatoes is just what the doctor ordered. I know you’re probably thinking it’s next to impossible to make a rich, flavorful stew in 30 minutes. But I’m here to tell you that it’s totally doable thanks to one of my favorite kitchen shortcuts: a rotisserie chicken from the grocery store. Those things are magical. Embrace them.

Also, make sure you use a nice big pot for increased surface area and faster cooking. It totally makes a difference.

This stew is satisfying enough all on it’s own. But I like to serve it over rice to make it extra hearty. You can cook up the rice while the stew is cooking. But day old rice is great here too!

Serves 4

African Peanut Stew with Chicken and Sweet Potatoes

Ingredients

  • For the Stew
  • 2 tablespoons vegetable oil
  • 1 cup diced onions
  • 2 cups peeled and diced sweet potatoes
  • 1 tablespoon minced fresh ginger
  • 2 garlic cloves, peeled and minced
  • 6 ounces tomato paste
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground cumin
  • 1/4 tsp. salt
  • 1/4. tsp. cayenne pepper
  • 4 cups chicken stock
  • 1/2 cup peanut butter
  • 3 cups cooked shredded chicken

  • For Serving
  • Cooked rice
  • Fresh cilantro, roughly chopped
  • Sliced peppers (either hot or mild)
  • Peanuts

Instructions

  1. Warm the vegetable oil in a large pot over medium-high heat. Add the onions and sweet potatoes and cook for 5 minutes, stirring occasionally. Add the ginger, garlic, tomato paste and spices. Cook for 2 minutes, stirring constantly. Add the chicken stock and peanut butter. Bring the stew to a low boil. Cook, uncovered, for 10 minutes, stirring occasionally to prevent the stew from scorching at the bottom and to help incorporate the peanut butter. Stir in the shredded chicken. Remove the stew from the heat and set aside.
  2. The stew can be served alone. Or you can ladle it over warm rice. Top with fresh cilantro, peppers and peanuts. Enjoy immediately.
  3. Leftovers can be store in an airtight container in your refrigerator for 2-3 days.

  1. Yum! I have to confess that I’ve never tried African peanut anything. I know, that’s so dumb, especially since I already know how good savory peanut butter is and I love Thai peanut everything! Looks amazing Liz and I love the november flair you added with the sweet taters!

  3. I can’t stand the early darkness either 🙁 Even worse for me are the dark winter mornings though, who wants to get out of bed if it’s cold, wet and dark? It’s hard enough as is, haha! Love this comforting stew, Liz! Such great flavors coming together.

No doubt with daylight savings, I’m suffering from wanting to be in bed by 5 pm – of course I can have it all done by then ; ) .   20. Oh my goodness, I’m totally disliking the fact that it’s dark out before 5pm. This stew is just the cure for those daylight savings’ blues! It looks gorgeous and so full of flavor! Love the sweet potatoes & rotisserie chicken – such a lifesaver!

  21. Oh I totally kind of love Daylight Savings time! Lol. I like the darkness… it makes the evenings feel so long (which is when my kids are in bed and I get to relax…) so I don’t mind! This stew has such fun flavors in it! So perfect for this chilly weather 🙂

  29. I totally hear you on daylight savings time! I’d actually prefer for it to be dark in the morning just for an extra hour of light in the evening…why do we need light in the morning again? Ha ha anyway I seriously want to try this stew because I love African peanut soup and those sweet potatoes sound amazing in there!

    • They really are so great. I used to think it was “cheating” too, but now I’m so on board with them and I probably buy one at least once a week too. They are great for making easy dinners happen fast!

  34. This was amazing! I cooked a whole chicken in a pot with carrot and onion so I had shredded chicken and homemade stock ready made for this dish. Loved the flavors and am very excited to eat the leftovers for lunch. Definitely a recipe I am going to make again. Thanks for sharing.
