Easy Grilled Ginger-Soy Lamb Chops

I’ve had several people ask me if I’m a vegetarian. Nope. Definitely not. A really good burger is probably one of my most favorite things in the world to eat. But I guess it’s just not something that I indulge in very often. And I don’t cook a lot of meat or seafood at home. And since this little corner of the internet that I call “mine” is a direct reflection of what I’m making and eating on a daily basis, meat and seafood dishes only make occasional appearances.

Soooo…now that we’ve cleared the air on that important issue, I bring you grilled lamb. Beautiful, succulent, flavorful lamb. Drool.

This recipe is so easy. You only need SEVEN INGREDIENTS. And that’s a legit count. None of this “oh you only need seven ingredients, but that doesn’t count salt, pepper, olive oil and blah blah blah”. No way. I would not lie to you people. You literally only need seven ingredients and a hot grill. Hallelujah! And everything comes together in a snap. You can make the marinade while the grill is pre-heating and the lamb only takes about 5 minutes to cook. It’s so easy. I love it for a casual weekday dinner. But trust me when I say people will be impressed if you served this at a weekend barbecue with friends and family.

Since there are so few ingredients here, I definitely recommend splurging at the butcher shop on the best lamb you can buy. I like to buy a small frenched rack of lamb and then cut it into chops when I get home (you can always ask your butcher to cut it for you, if you prefer). Happy grilling!

Just one word of caution: your grill will flare up fairly significantly once you start basting the lamb chops with the marinade. So please be careful!

Easy Grilled Ginger-Soy Lamb Chops

Serves 2-4

Easy Grilled Ginger-Soy Lamb Chops

Ingredients

  • 8 lamb chops
  • 3 tablespoons soy sauce
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon brown sugar
  • 2 tablespoons fresh ginger, peeled and minced
  • 1 garlic cloves, peeled and minced
  • 1 tablespoon fresh parsley, roughly chopped

Instructions

  1. Remove the lamb chops from your refrigerator and leave them at room temperature for several minutes to take some of the chill off. Trim and discard any excess fat from the meat. Pre-heat your grill to high.
  2. While your grill is pre-heating, make the marinade. In a small bowl, combine the soy sauce, olive oil, brown sugar, ginger and garlic. Mix well. Then remove two tablespoons of the marinade to a clean bowl and set it aside for later.
  3. Lightly oil your grill racks. Place the lamb chops on the grill and cook for 2 minutes. Then flip the lamb chops and baste them generously with the marinade. Word of caution: your grill will flare up while you do this. Work CAREFULLY people!
  4. Cook the lamb chops for 2 minutes on the second side. Then flip again and baste them generously a second time. Continue cooking until they are done, just about 1 minute more. Remove from the grill and transfer to serving platter. Garnish with the chopped parsley.
  5. Serve immediately with some of the reserved marinade.

    • Yes! You should definitely try this out. Super duper simple! I’m definitely no grill master and certainly not a big meat eater, and I can do this recipe with my eyes closed and it never fails!

    • Thanks for stopping by! I don’t calculate the calories in my recipes. But I’m think there are many apps/programs where you can type in all the ingredients and it spits out a number for you. You could try that if you are interested. And I have a mix of recipes on my site – some healthy and some indulgent. And I try to keep things seasonal. I hope you can find recipes that fit your lifestyle!

    • Ha ha. Yeah that is a popular scam indeed! Admittedly, I’ve done it myself a few times! And agree = definitely have to have good quality stuff here. Especially with so few ingredients.

  14. Your recipe says to make the marinade, put chops on the hot grill, 2 min., turn and baste chops, etc. It does not say to marinate the chops at all before putting them on the grill. Is this what you mean??? Usually a marinade goes on the meat before cooking. Please answer fast as I want to make this recipe for dinner – it sounds yummy. Thanks.

    • No the chops aren’t marinated in advance. Just baste the chops with the ginger/soy sauce mixture during grilling.

  16. This recipe is my favorite way to present lamb to friends who are afraid to taste lamb. I have these chops dozens of times and many people ask for the recipe. It is easy to prepare, with simple ingredients that are easy to find and inexpensive, but more importantly they taste amazing!

  18. For those of us who live rurally and can’t run to the store everyday, you can make this with ground ginger and granulated garlic. The soy sauce and oil will rehydrate the granulated garlic and thicken the mixture in a couple of minutes. I’ve never added brown sugar; I’ll have to try that. I love the flavor of these lamb chops and you never need any of that nasty mint jelly to “cover up the lamb taste.”

    I do have a question. Why is lamb so hard to find? You almost never see it in the grocery stores! And why is most of the lamb you see from Australia? I live in northern New Mexico and have seen large herds in Colorado and NM, but we hardly ever see lamb in our grocery stores. And when we do, it’s very expensive. Can you explain this?

    • Hi Sandy. Glad you made the recipe work for you. Lamb chops are often hard for me to find at the grocery store, too. A specialty butcher shop is usually my best bet.
