Grilled Sausages with Mango Salsa

Memorial Day weekend is the perfect time to get re-acquainted with your grill. And maybe try out a few new grilling recipes while you’re at it.

And if you’ve been neglecting your grill like me, it’s also a great time to give it a deep clean. Yikes.

These Grilled Sausages with Mango Salsa are easy and fun way to celebrate the unofficial start of Summer. They have a savory-sweet-spicy flavor combination that will really liven up your usual set of grilling staples. I hope you’ll give them a try at your next party!

There are three parts to making these sausages: the mango salsa, the spicy sauce and the sausages. The mango salsa and spicy sauce can be made in advance, which I highly recommend doing if you’re able. Because not only does this mean that you’ll spend less time working in the kitchen and have more time for hanging out. But I personally think the flavor of the mango salsa improves after it sits for a couple hours. So at the very least, I like to prepare it the morning of when I plan on serving it.

I typically choose mild Italian pork sausages for this recipe. But you could go mild or spicy, use chicken sausages or even try a vegetarian sausage. It’s easy to adjust this recipe to make everyone happy!

Grilled Sausages with Mango Salsa

Grilled Sausages with Mango Salsa

Ingredients

For the Mango Salsa:

  • 2 cups chopped mango (from about 1 large or 2 small)
  • 1/2 cup chopped red pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons minced red onion
  • 2 tablespoons minced jalapeño pepper
  • Juice and zest from 1 lime

For the Spicy Sauce:

  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 2-3 tsp. sriracha
  • Pinch of salt

For the Sausages:

  • 6 sausages (I used mild Italian pork sausages)
  • 6 split top buns

Instructions

  1. In a medium bowl, stir together all the ingredients for the mango salsa. Cover and refrigerate until you’re ready to use it. The mango salsa can be used immediately, or stored in your refrigerator for up to a day before using.
  2. Stir together all the ingredients for the spicy sauce. Cover and refrigerate until you’re ready to use it. The spicy sauce can be made in advance and stored in your refrigerator for 2-3 days before using.
  3. Pre-heat one side of your grill to medium-high. Add the sausages to the unlit side of your grill and close the lid. Cook for 8 minutes. Then move the sausages to the lit side of your grill. Cook, turning occasionally, for 6-8 minutes. The sausages should be charred in some places. If you’re using pork sausages, the internal temperature should be 160 degrees. Chicken sausages should be cooked until the internal temperature measures 165 degrees. Remove the sausages from your grill and place them on a clean plate
  4. Grill your buns until lightly toasted, if desired.
  5. To serve, spread some of the spicy sauce onto the inside of the buns. Add the sausages and a big spoonful of the mango salsa. Enjoy immediately.
