Avocado Toast with Asparagus and Strawberries

I know that the internet doesn’t really need another recipe for avocado toast. But I couldn’t resist sharing this one with the world. The combination of ingredients is SO GOOD, that keeping it all to myself seemed selfish and unfair.

Also, it’s really pretty. And I like to share pretty things with you.

We’ve had some gorgeous weather here this past week and my tiny seaside town has finally started to come alive once again. After a sleepy winter, it’s nice to see the streets and beaches filled with people. It’s a sure sign that Spring is almost here. Hooray!

Another quintessential hallmark of Spring is the return of asparagus to the grocery stores. I’ve always been a big fan of roasted asparagus, but I must admit that eating it for breakfast seemed a little strange to me. That is, of course, until I started combining it with avocado, strawberries, fresh mint and a drizzle of balsamic vinegar. Now, I can’t seem to get enough asparagus at breakfast time. This has been my preferred way to start my day for at least a week now. And it shows no signs of slowing down or stopping. There is just something about the savory-sweet combination of asparagus and strawberries that has totally won me over. And I know it will win you over too!

Avocado Toast with Asparagus and Strawberries

Serves 2

Avocado Toast with Asparagus and Strawberries


  • 12-16 asparagus spears, trimmed to fit your bread
  • 1 tablespoon extra-virgin olive oil
  • 1/4 tsp. salt
  • 2 avocados
  • 4 slices of bread, toasted
  • 6-8 strawberries, trimmed and sliced in half
  • Fresh mint leaves
  • Balsamic vinegar


  1. Pre-heat your oven to 425 degrees. Toss the asparagus with the olive oil and salt and spread it out onto a rimmed baking sheet. Transfer the baking sheet your pre-heated oven and roast the asparagus until it’s crisp-tender, about 12 minutes. Remove from the oven and set aside to cool slightly.
  2. Cut the avocados in half. Remove and discard the seeds. Scoop the flesh out and place it on the toasted bread, using about 1/2 an avocado for each bread slice. Mash the avocado flesh down with the tines of a fork. Top the mashed avocado with a few spears of roasted asparagus, sliced strawberries and fresh mint leaves. Drizzle with balsamic vinegar. Serve and enjoy.

  2. Mmmmm (!!) I tried asparagus with avo and mint toast for the first time last year.. but OMGeee Liz.. adding straw and balsamic? You’ve persuaded me that I need to give this a go!     • Totally. It can be overwhelming sometimes during tourist season and then I wish for it to be quiet again. But then in the dead of winter, I can’t wait to see all the people come back!
