I know that the internet doesn’t really need another recipe for avocado toast. But I couldn’t resist sharing this one with the world. The combination of ingredients is SO GOOD, that keeping it all to myself seemed selfish and unfair.

We’ve had some gorgeous weather here this past week and my tiny seaside town has finally started to come alive once again. After a sleepy winter, it’s nice to see the streets and beaches filled with people. It’s a sure sign that Spring is almost here. Hooray!
Another quintessential hallmark of Spring is the return of asparagus to the grocery stores. I’ve always been a big fan of roasted asparagus, but I must admit that eating it for breakfast seemed a little strange to me. That is, of course, until I started combining it with avocado, strawberries, fresh mint and a drizzle of balsamic vinegar. Now, I can’t seem to get enough asparagus at breakfast time. This has been my preferred way to start my day for at least a week now. And it shows no signs of slowing down or stopping. There is just something about the savory-sweet combination of asparagus and strawberries that has totally won me over. And I know it will win you over too!
